Sweet Buttered Carrots

The experiences we have throughout life are what shapes us. They also develop a lifetime of memories. It was family movie night and we were about to watch a Looney Tunes feature. My dad and uncle thought it would be a great idea to peel some carrots so we could eat just like Bugs Bunny while we watched the show. 

Sure, it was a fun idea. Until I realized that was their way of manipulating us kids to eat carrots. I hated carrots. Couldn't stand them. I always picked them out of my food. ALWAYS.

For the sake of Bugs Bunny (he was my favorite character), I took a few chomps into that raw carrot... Not really a good memory there. So why am I posting a recipe on carrots? Because like several other vegetables, many years later, I grew to like carrots. I still don't like raw carrots though. It's hard for me to eat baby carrots like a snack. Tried it recently and I don't plan on trying it again. However, sauteed carrots, steamed carrots, carrots added in a stew, as long as it has been amped up with flavor, I'll try it. My uncle introduced me to this version of carrots and it is definitely a must try. Too bad he didn't serve this up that time we watched Looney Tunes. I would have liked carrots much sooner in life...

As the name implies, these carrots are a little sweet yet still savory. They also have a nice buttery flavor. I hope you give it a try and if you have kids who hates carrots, this MIGHT change their mind.

Ingredients:

​4 – 6 Carrots
1/3 cup Butter
1 – 2 Onions
1 tbsp. Sugar
½ tsp. Salt or to taste
¼ tsp Pepper or to taste

Directions:

​1. Prepare carrots by peeling, cutting off the ends, and rinsing them thoroughly. (Avoid cello carrots. They are too thin for this recipe. It's best to use larger loose carrots.)

​2. Cut carrots thinly at an angle. If you want the carrots tender yet still retain a slight crunch, avoid cutting them too thinly. Also, keep in mind that the thinner they are sliced, the quicker they will cook. Set carrots aside.

​3. Prepare onions by peeling and dicing into large pieces. Set onions aside.

​4. In a large pan, add 1/3 cup of butter and place on medium high heat. Allow butter to melt while stirring it in the pan. You can adjust the amount of butter being used based on the amount of carrots. You want enough to fully coat all the carrots and to be able to steam the carrots. However, you don't want to use too much to have the carrots sitting in a pool of butter. Butter always makes things taste delicious but too much butter is never good for you.

​5. Once butter has melted, add in onions. Stir to combine the onions and butter then sauté the onions for about 2 – 3 minutes or until the onions have start to become translucent.

​6. Add carrots and thoroughly coat carrots in the onion/butter mixture.

7. Reduce heat to medium, place lid on pan, and let the carrots cook through for about 8 – 12 minutes. Stir carrots occasionally to prevent it from burning or sticking to the pan.

8. Sprinkle 1 tbsp. of sugar, ½ tsp. of salt and ¼ tsp of pepper on the carrots. Mix thoroughly to fully incorporate the spices and sauté for about another minute or two. (Salt and Pepper can be adjusted to taste.)

​9. Sample carrots to see if it has reached desired tenderness. It’s best when it’s nice and tender but still retains a slight crunch. Feel feel to let it cook longer if you prefer softer carrots. Sweet Buttered Carrots are ready to be served!
