Smoked Turkey & QuinoaThe first time I ever tried quinoa, it was so disgusting. It was on a salad and it felt like I was eating sand. I kept questioning why in the world would anyone want to eat sand?! It had absolutely no taste and it was grainy (probably wasn't even fully cooked). From that day forward, I made it an appoint to avoid quinoa at all costs.
Years later, I wanted to find a healthy alternative to rice as I was eating way too much of it and my weight clearly showed it. Quinoa was among that list of healthy alternatives and despite my contempt for quinoa, I decided to give it another try. Healthy can still be palatable and after playing around with this, I'm just sad I didn't come up with this recipe much sooner. |
The smoked turkey and use of chicken broth was exactly what the quinoa needed. It absorbs all the flavor and makes it quite enjoyable. The fresh scallions on top is what really sets it over the edge. It is something you HAVE to try.
Ingredients:
2 cups Quinoa
4 cups Chicken Broth 1 Smoked Turkey Leg, shredded ½ Bell Pepper, diced ½ Medium-Sized Onion, diced ½ cup Frozen Sweet Peas 1 tbsp epis 2 tbsps Oil Adobo Goya and/or Salt to taste |
