Smoked Turkey

I have whipped up kale several different ways over the years and this by far is one of my favorites. I make these in large batches, especially when meal prepping. They freeze very nicely and are great when reheated. The combination of veggies and protein combined with the flavor from the chicken broth and hint of citrus from the lime makes this a total hit for any occasion. It uses simple ingredients and it cooks relatively quick. Be sure to give this one a try!

1. Start off by having all your ingredients prepped. Slice the bell pepper and onions. Shred the smoked turkey by hand. Rough chop the mushrooms (or you can leave sliced if preferred). Juice the lemons.
2. In a large pot placed on high heat, add in the oil. Once it reaches temperature, add in the sliced onions and bell peppers. Combine then saute for about a minute.
3. Add in the mushrooms and epis (or 2 cloves of minced garlic). Mix well to combine. Add in a dash of sea salt if desired. Saute for another couple of minutes.
4. Add in the shredded smoked turkey, mix well and allow it to heat through.
5. Next add in the chicken broth. Once it reaches a simmer, add in the packages of kale. Cover and let steam for about 3 - 5 minutes.
6. Mix the kale to combine with the ingredients at the bottom of the pot. Then add in the lemon juice (don't forget this important ingredient). Mix well.
7. Add additional sea salt to taste if needed. Mix well. Cover the pot and re-steam until the kale reaches your desired tenderness. Then, it's time to enjoy!
