Cream Cheese FrostingA cupcake is not a cupcake without a deliciously whipped frosting smothering the top. To make things even better, you can whip up your own home made frosting with just a few simple ingredients and it's 10x better than the store bought stuff in a container.
This is a specific recipe that I personally enjoy on my homemade variation of Haitian Cupcakes. It compliments it very, very well. Of course, you can always decorate your cupcakes to your liking, or even change the color with a few drops of food coloring. Use this recipe on the next cupcake you make, whatever the flavor, and trust me, you'll never go back to the store bought stuff again. |

1. Be sure your cream cheese and unsalted butter is softened at room temperature (NOT melted). If it is too hard or stiff, they will not mix well and your frosting won't be as smooth. Let them sit out of the refrigerator for a minimum of 30 minutes. Using either a stand or hand mixer, beat until well combined and fairly smooth. You may need to scrape the edges with a spatula as needed.
2. Once well combined, add in the 1 tsp. of vanilla extract and 1 tsp. of almond extract. Beat with the mixer again until well combined.
3. Once the butter, cream cheese, and extracts are well combined, add in 1 cup of powdered sugar at a time, then mix again until well incorporated.
4. You will repeat this mixing process, 1 cup of powdered sugar at a time, until all 4-5 cups are completed. 4 cups for a softer consistency vs 5 cups for a thicker consistency. I always prefer 5 cups. Be sure to scoop the edges with a spatula time to time to make sure everything is well mixed. Once complete, if desired, you can add food coloring of your choice to change the color of your frosting.
