Chocolate Peanut

The dough was hard to mix and I thought the batch was ruined. Not wanting to waste it, I baked it anyway. The next morning, I decided to taste my weird concoction and realized I couldn't stop eating it... It was so freakin' good! My so called mistake turned out to be one of the best cookies I've ever baked. I went through several remakes trying to recreate my original "mistake" until I finally got this foolproof recipe. This batch will make anywhere from 28 - 30 cookies. When I tell you these are good, these are delicious! I've had several taste testers to prove it too!

1. Preheat your oven to 350 degrees F. In a large mixing bowl, combine 1 stick of softened butter, 1 large egg, and 3 tbsps. of peanutbutter. Avoid using unsalted butter. Use your favorite brand of peanutbutter (I use Peter Pan). Beat with a hand blender until thouroughly mixed.
2. Add in 1 tsp. of vanilla extract and blend to comine once again.
3. Add 1/2 tsp course sea salt and 1/2 tsp baking soda to 2 cups of all-purpose flour in a separate bowl and mix with a fork to combine. I highly recommend the course sea salt. The granules dispersed in the cookie gives it that perfect element of sweet and salty in every bite.
4. To the wet mixture, add in all the remaining ingredients: flour mix, 1/2 cup brown sugar, 1/4 cup granulated sugar, 3/4 - 1 cup peanutbutter chocolate chip morsels (Nestle's brand).
5. Using a spatula or gloved hands, mix the ingredients together until well combined. It will take a little bit of effort. My brother had fun mixing it together and decided to form a ball of dough. You don't need to form a ball, but it needs to be mixed well enough to have the consistency of what is formed below.
6. Drop by rounded tablespoon fulls or use a cookie scoop and place on an aluminum foil lined baking sheet. They don't need to be 2 inches apart. 1 inch apart will be sufficient as they won't completely spread when cooking. Place in a preheated oven of 350 degrees F. Bake for no more and no less than 11 minutes.

7. Remove from oven at 11 minutes and lift the aluminum foil off of the baking sheet to allow the cookies to cool. You may bake the remaining dough in the meantime. Once your cookies have gently cooled off, they are ready to enjoy! They taste even better the next day (if they last that long).
